  1. Warm the Milk Mixture In a saucepan, heat milk, butter, and salt until it just begins to steam. Let cool until lukewarm.
  2. Activate the Yeast In a small bowl, dissolve yeast and 1 tsp sugar in warm water. Let sit for 10 minutes until foamy.
  3. Mix the Dough In a large bowl, beat eggs and remaining sugar until thick. Add the milk mixture, yeast mixture, and flour. Mix until a soft dough forms.
  4. Let It Rise Transfer dough to a buttered bowl, cover, and let rise in a warm place until doubled—about 2 hours.
  5. Shape and Rest Turn dough onto a floured surface. Press into a sheet about ½ inch thick. Cover and let rise again for 1–1½ hours.
  6. Fry the Doughboys Heat oil to 350°F (175°C). Cut or pull pieces of dough, stretch into rough circles, and fry until golden brown—about 1 minute per side.
  7. Coat and Serve Drain briefly on paper towels, then toss in cinnamon sugar while warm. Serve immediately!
