🍲 Method:
- Cook the Beans
- Boil soaked beans in water until tender. Drain and set aside.
- Brown the Meats
- In a large pot, heat olive oil. Brown pork shoulder and belly. Remove and set aside.
- Sauté the Base
- In the same pot, sauté onion and garlic until golden. Add tomatoes and cook until soft.
- Build the Stew
- Return meats to the pot. Add carrots, bay leaf, paprika, salt, and pepper. Pour in enough water to cover. Simmer for 45 minutes.
- Add Sausages and Beans
- Add chouriço, morcela (if using), and cooked beans. Simmer for another 30 minutes until everything is tender and flavorful.
- Finish and Serve
- Adjust seasoning. Garnish with chopped parsley. Serve hot with rice or crusty bread.
