
π π« Puttanesca Beans with Garlic Bread
π₯ Instructions
- Make the bean stew
- Heat olive oil in a skillet over medium heat.
- SautΓ© onion until soft (about 5 minutes), then add garlic and tomato paste.
- Stir in tomatoes, broth, beans, olives, and capers. Simmer for 10β15 minutes until thickened.
- Finish with vinegar/lemon juice, parsley, and Parmesan. Adjust seasoning.
- Prepare garlic bread
- Preheat oven to 400Β°F (200Β°C).
- Brush bread slices with olive oil and toast for 8β10 minutes until golden.
- Rub each slice with the garlic clove while still hot. Sprinkle with oregano or chili flakes if desired.
- Serve
- Spoon the warm puttanesca beans into bowls.
- Garnish with extra parsley or cheese.
- Serve with garlic bread on the side for dipping and scooping!
