  • 1 cup vegetable oil (use the same oil from frying meat if possible)
  • 1000 ml blended fresh tomatoes
  • 50 ml blended fresh red peppers (e.g. Scotch bonnet or tatashe)
  • 2 tbsp tomato paste
  • 2 cloves garlic, minced
  • 2 fingers fresh ginger, grated
  • 2 seasoning cubes (Maggi or Knorr)
  • 1 tsp curry powder
  • 1 tsp dried thyme
  • ½ tsp ground nutmeg
  • Salt to taste
  • 4 cups meat stock or water

🌿 Optional Additions

  • Bay leaves (2, for aroma)
  • Butter (2 tbsp, added at the end for richness)
  • Sliced green bell peppers (for garnish)
