π³ Method
- Season and Cook the Meat
- Season chicken or beef with salt, curry, thyme, onions, and one seasoning cube.
- Boil until tender, then separate meat and stock.
- Deep-fry the meat until golden (optional).
- Parboil the Rice
- Boil rice for 3β5 minutes, then rinse thoroughly to remove excess starch. Set aside.
- Prepare the Tomato Base
- In a large pot, heat oil. SautΓ© onions for 2 minutes.
- Add tomato paste and fry for 5 minutes.
- Add blended tomatoes and peppers. Fry until the oil separates and the sauce darkens (about 20 minutes).
- Build the Flavor
- Add garlic, ginger, curry, thyme, nutmeg, remaining seasoning cube, and meat stock.
- Stir and tasteβshould be slightly over-seasoned (the rice will absorb it).
- Cook the Rice
- Add parboiled rice to the sauce. Stir gently to combine.
- Cover with foil and lid to trap steam. Cook on low heat for 30β40 minutes until rice is tender and fluffy.
- Finish and Serve
- Stir in butter and garnish with sliced bell peppers.
- Serve with fried meat, plantains, or salad.
