
🍅 Portuguese Tomato Rice (Arroz de Tomate)
👨🍳 Instructions
- Sauté the Aromatics Heat olive oil in a medium pot. Add onion and garlic, and cook until soft and fragrant.
- Add Tomatoes Stir in chopped tomatoes and tomato paste. Season with salt, pepper, chili flakes, and add the bay leaf. Cook for 5–7 minutes until tomatoes break down.
- Add Rice and Stock Stir in the rice to coat with the tomato mixture. Pour in the stock and bring to a boil.
- Simmer Reduce heat to low, cover, and simmer for 15–20 minutes until rice is tender and creamy. Stir occasionally and add more stock if needed.
- Finish and Serve Remove bay leaf, adjust seasoning, and garnish with chopped parsley. Serve warm as a side or light main dish.
