  1. Sauté the Aromatics Heat olive oil in a medium pot. Add onion and garlic, and cook until soft and fragrant.
  2. Add Tomatoes Stir in chopped tomatoes and tomato paste. Season with salt, pepper, chili flakes, and add the bay leaf. Cook for 5–7 minutes until tomatoes break down.
  3. Add Rice and Stock Stir in the rice to coat with the tomato mixture. Pour in the stock and bring to a boil.
  4. Simmer Reduce heat to low, cover, and simmer for 15–20 minutes until rice is tender and creamy. Stir occasionally and add more stock if needed.
  5. Finish and Serve Remove bay leaf, adjust seasoning, and garnish with chopped parsley. Serve warm as a side or light main dish.
