Preheat oven to 400°F (200°C).

Pat the tenderloins dry with paper towels. Rub the herb mixture all over the meat. If using mustard, spread a thin layer before applying the herbs.

Sear the meat: Heat a skillet over medium-high heat. Sear the tenderloins for 2–3 minutes per side until browned.

Transfer to oven: Place the tenderloins in a roasting pan or oven-safe skillet. Roast for 20–25 minutes, or until internal temperature reaches 145°F (63°C).

Rest the meat: Remove from oven and let rest for 5–10 minutes before slicing.

Serve: Slice into medallions and garnish with fresh thyme. Serve with roasted potatoes or seasonal vegetables.
