
🍗 Balsamic Fig Glazed Chicken
👩🍳 Method
- Season the chicken: Pat the chicken dry and season both sides with salt and pepper.
- Sear the chicken: Heat olive oil in a skillet over medium-high heat. Add chicken thighs, skin-side down, and cook until golden brown (about 5–7 minutes). Flip and cook the other side for 3–4 minutes. Remove and set aside.
- Make the glaze: In the same pan, reduce heat to medium. Add chopped shallots and sauté until soft. Stir in fig preserves, balsamic vinegar, honey, and thyme. Simmer for 3–5 minutes until thickened slightly.
- Glaze the chicken: Return chicken to the pan. Spoon glaze over each piece. Cover and simmer on low heat for 15–20 minutes, or until chicken is cooked through and glaze is sticky.
- Serve: Garnish with chopped walnuts and gorgonzola if desired. Serve with roasted vegetables, mashed potatoes, or rice.
