🔥 Instructions

  1. Prep the Chicken Butterfly the chicken by removing the backbone and flattening it. Cut into two halves if desired.
  2. Make the Marinade Mix lemon juice, garlic, ¼ cup olive oil, pimento paste, salt, and pepper. Rub generously over the chicken.
  3. Roast Place chicken on a rack over a baking sheet. Pour 2 tbsp olive oil and ½ cup wine over it. Roast at 200°C (400°F) for 30 minutes.
  4. Flip & Finish Turn chicken over, pour remaining olive oil and wine, and roast another 30 minutes until golden and cooked through.
  5. Rest & Serve Let rest for 10 minutes before carving. Serve with roasted potatoes or a fresh salad.
