
π Jamaican Brown Stew Fish
π³ Method
- Clean and Season the Fish
- Wash fish with lime and water to remove any raw odor.
- Pat dry and make 2β3 slashes on each side.
- Season with salt, pepper, and fish seasoning. Let marinate for 30 minutes.
- Fry the Fish
- Heat oil in a large skillet. Add pimento seeds, garlic, and Scotch bonnet to infuse flavor.
- Fry fish on both sides until golden brown. Remove and set aside.
- Make the Stew Base
- In the same pan, remove excess oil, leaving about 1 tbsp.
- SautΓ© onion, bell pepper, tomato, scallion, and thyme for 2β3 minutes.
- Add ketchup, browning sauce, and water. Simmer for 5β7 minutes.
- Simmer the Fish
- Return fried fish to the pan. Spoon sauce over the fish.
- Cover and simmer on low heat for 5β10 minutes.
- Add cornstarch if you want a thicker gravy.
- Serve Hot
- Pair with rice and peas, boiled yam, or fried plantains.
