π³ Instructions
- Prep the Octopus: Rinse under cold water and pat dry. Ensure itβs fully cleaned.
- Build the Broth: In a large pot, combine water, onion, garlic, bay leaves, peppercorns, vinegar/wine, salt, and optional aromatics.
- Simmer Gently: Bring to a boil, then reduce to a gentle simmer.
- Cook the Octopus: Using tongs, lower the octopus into the pot. Simmer covered loosely for 45β60 minutes until tender.
- Rest & Serve: Turn off the heat and let it rest in the liquid for 10 minutes. Slice and serve with olive oil, lemon, or your favorite dressing.
π‘ Tip: Frozen octopus often turns out more tender than fresh due to broken-down muscle fibers from freezing.
