- Tenderize the octopus: Boil the octopus in salted water with bay leaves for about 40–45 minutes until tender. If using frozen octopus, thaw completely first.
- Marinate: Let the octopus cool slightly. Toss with olive oil, garlic, lemon juice, oregano, salt, and pepper. Let it rest at room temperature for 30 minutes.
- Grill: Preheat your grill to medium-high. Slice tentacles and grill for 3–4 minutes per side until lightly charred.
- Serve: Drizzle with more olive oil and lemon juice. Garnish with fresh herbs and serve with grilled lemon wedges.
