🍳 Method

1. Prepare the Marinade

  • On a cutting board, mash garlic, pepper, and salt into a paste using the side of a chef’s knife.
  • Transfer to a bowl and mix in black pepper, scallions, shallot, lime juice, and olive oil.

2. Marinate the Fish

  • Place the cleaned snapper in a shallow dish.
  • Stuff the cavity with thyme, sliced onion, and squeezed lime wedges.
  • Pour marinade over and inside the fish. Cover and refrigerate for 1 hour.

3. Make the Garlic Aioli

  • In a bowl, whisk egg yolk, mustard, and garlic.
  • Slowly drizzle in oil, whisking constantly until thick and creamy.
  • Add lime juice, adjust seasoning, and chill until ready to serve.

4. Grill the Snapper

  • Preheat grill to 450Β°F (230Β°C).
  • Place fish in a greased fish basket or directly on the grill.
  • Grill for 10–12 minutes per side, until cooked through and lightly charred.

5. Serve

  • Transfer fish to a platter. Garnish with scallions, parsley, and lime wedges.
  • Serve with a generous spoonful of garlic aioli on the side.
