
π Caribbean Grilled Snapper with Garlic Aioli
π³ Method
1. Prepare the Marinade
- On a cutting board, mash garlic, pepper, and salt into a paste using the side of a chefβs knife.
- Transfer to a bowl and mix in black pepper, scallions, shallot, lime juice, and olive oil.
2. Marinate the Fish
- Place the cleaned snapper in a shallow dish.
- Stuff the cavity with thyme, sliced onion, and squeezed lime wedges.
- Pour marinade over and inside the fish. Cover and refrigerate for 1 hour.
3. Make the Garlic Aioli
- In a bowl, whisk egg yolk, mustard, and garlic.
- Slowly drizzle in oil, whisking constantly until thick and creamy.
- Add lime juice, adjust seasoning, and chill until ready to serve.
4. Grill the Snapper
- Preheat grill to 450Β°F (230Β°C).
- Place fish in a greased fish basket or directly on the grill.
- Grill for 10β12 minutes per side, until cooked through and lightly charred.
5. Serve
- Transfer fish to a platter. Garnish with scallions, parsley, and lime wedges.
- Serve with a generous spoonful of garlic aioli on the side.
