Prepare the Prawns

Rinse and pat dry. Butterfly them by slicing along the back to open slightly.

Make the Marinade

In a bowl, mix garlic, chilli, lemon zest and juice, olive oil, salt, pepper, and optional spices.

Marinate

Add prawns to the bowl and toss well. Let them marinate for 20–30 minutes in the fridge.

Grill

Preheat your BBQ or grill pan to high heat.

Place prawns directly on the grill or thread onto skewers.

Grill for 2–3 minutes per side until pink and slightly charred.

Serve

Sprinkle with fresh herbs and serve with lemon wedges.

Great with rice, couscous, or fresh bread.
