🍳 Method
- Make the Roux
- In a large pot, heat oil over medium heat.
- Add flour and stir constantly until golden brown (about 3–5 minutes). This forms the base of your pot liquor.
- Sauté the Aromatics
- Add onions, garlic, and bell pepper. Cook until softened and fragrant (about 5 minutes).
- Add Seasonings and Veggies
- Stir in Cajun seasoning, thyme, and bay leaf.
- Add potatoes and green beans. Toss to coat in the roux and spices.
- Simmer to Smother
- Pour in vegetable broth or water. Bring to a boil, then reduce heat to low.
- Cover and simmer for 30–40 minutes until potatoes are tender and green beans are soft but not mushy.
- Taste and Serve
- Adjust salt and pepper.
- Serve warm with cornbread, rice, or as a main dish with a side salad.
