Croutons (Optional): Cube bread and fry in butter until golden. Set aside.

Prepare Potatoes:

Boil half the potatoes until tender.

Grate the other half raw, then squeeze out liquid using a towel or nut milk bag.

Let the liquid settle and save the starch at the bottom.

Mash & Mix:

Mash the boiled potatoes until smooth.

Combine with grated potatoes, salt, nutmeg, and reserved starch.

Slowly add hot water and mix thoroughly.

Form Dumplings:

Shape dough into balls.

If using croutons, press 2–3 into the center of each dumpling and seal.

Cook:

Simmer dumplings in hot (not boiling) salted water.

They’ll float after ~5 minutes. Let sit for another 15 minutes.

Serve:

Remove with a slotted spoon and serve immediately with gravy or roasted pork.
