Boil Potatoes: Cook potatoes in salted water until tender (15–20 min). Drain and let cool.

Make Croutons: While potatoes cool, melt butter and fry bread cubes until golden. Set aside croutons and reserve browned butter.

Mash & Mix: Peel and mash potatoes. Season with nutmeg, cayenne, salt, and pepper. Add eggs and flour; mix until just combined.

Form Dumplings: Wet hands, scoop dough, and shape into balls. Insert 2–3 croutons into the center of each and seal.

Cook: Simmer dumplings in salted water. Once they float (1–2 min), cover and simmer for 10 more minutes. Flip and cook another 10 min.

Serve: Drizzle with reserved browned butter, sprinkle with croutons and chives. Serve hot with gravy or alongside red cabbage and sausage.
