- Cook the beets: Wash thoroughly and boil, steam, or roast until tender (about 40–50 minutes). Let cool, peel, and dice into bite-sized cubes.
- Make the dressing: In a bowl, whisk together olive oil, vinegar or lemon juice, cumin, salt, and pepper.
- Assemble the salad: Toss the diced beets with chopped onion, parsley, and cilantro. Pour the dressing over and mix gently.
- Chill and serve: Let the salad marinate in the fridge for at least 30 minutes before serving. Garnish with extra herbs if desired.
