👨‍🍳 Instructions:

  1. Marinate the Beef Coat beef chunks with crushed red pepper and refrigerate overnight.
  2. Layer the Aromatics In a Dutch oven, scatter onion, parsley, garlic, and bay leaves. Wrap allspice and cloves in cheesecloth or a tea ball and add to the pot.
  3. Add the Beef & Sauce Place beef on top, dot with lard or butter. Mix wine, tomato paste, and cinnamon, then pour over the beef.
  4. Slow Cook Bring to a boil, then reduce to a gentle simmer. Cover and cook for 3 to 3½ hours, turning occasionally.
    • For a stew-like texture: keep the lid on.
    • For a thicker, glaze-like sauce: remove the lid halfway through.
  5. Finish & Serve Remove bay leaves and spice pouch. Serve hot with potatoes, peppers, and greens.
