👨🍳 Instructions
- Soak the beans overnight in water. Drain before cooking.
- Combine ingredients: In a large pot, add beans, stock, garlic, onion, pork belly, pancetta, chorizo, and blood sausage.
- Bring to a boil, then reduce to a low simmer. Skim off any foam that rises.
- Add seasonings: Stir in olive oil, paprika, and saffron.
- Simmer uncovered for 2 hours, adding water as needed to keep beans covered.
- Remove meats: Once tender, take out the meats, slice them, and return to the pot.
- Serve hot with crusty bread and a glass of red wine.
