🥘 Fabada Asturiana (Spanish White Bean & Chorizo Stew)

🍲 Instructions
Prep the meats: If using semi-cured sausages, poke them with a fork to prevent bursting. Brown raw meats if needed.

Simmer the base: In a large pot, combine meats, chopped vegetables, garlic, and bay leaf. Cover with water or stock and bring to a boil. Simmer for 15 minutes.

Remove & blend: Take out the meats, discard garlic and bay leaf. Blend the vegetables and broth into a thick soup.

Finish the stew: Cut meats into bite-sized pieces, return to pot with rinsed beans. Simmer gently for 5 minutes.

Serve hot: Even better the next day as flavors deepen!

🇪🇸 A Taste of Tradition
Fabada Asturiana is more than a meal—it’s a cultural icon. Traditionally made with fabes de la granja (buttery white beans), morcilla, chorizo, and tocino, it’s a dish that brings families together, especially during winter or festive gatherings.
