Preheat oven to 425°F (218°C). Place a 10-inch oven-safe skillet on the lower rack to heat.
Make the batter: Whisk eggs, flour, milk, mustard, salt, pepper, and nutmeg until smooth. Let rest for 10 minutes.
Melt butter in the hot skillet. Swirl to coat the bottom and sides.
Add fillings: Pour batter into the skillet. Scatter ham and cheese into the center, leaving the edges clear so they puff up.
Bake for 16–20 minutes until puffed and golden. Reduce heat to 300°F (148°C) and bake 5 more minutes to set.
Serve: Garnish with fresh herbs and serve immediately. Best enjoyed hot and puffed!
