- Mix Dry Ingredients
- In a large bowl, whisk together flour, baking powder, and salt.
- Mix Wet Ingredients
- In a separate bowl, combine mashed banana, melted butter, egg, buttermilk, brown sugar, and vanilla.
- Combine and Rest
- Pour wet mixture into dry ingredients. Stir gently until just combinedβdonβt overmix.
- Let the batter rest for 5 minutes while you heat your pan.
- Cook the Pancakes
- Heat a nonstick skillet or griddle over medium heat. Grease lightly with butter.
- Pour β cup of batter per pancake. Cook until bubbles form and edges look set (2β3 minutes), then flip and cook another 1β2 minutes.
- Serve Warm
- Top with sliced bananas, maple syrup, chopped walnuts, or chocolate chips.
