Sauté aromatics: Heat olive oil in a pot. Add onion and garlic, cook until golden.
Add potatoes: Stir in diced potatoes and cook for a few minutes.
Spice it up: Add turmeric, cinnamon, salt, and pepper. Mix well.
Add lentils and liquid: Pour in soaked lentils and stock. Bring to a boil.
Simmer: Cover and cook for 30–40 minutes until lentils and potatoes are tender.
Finish and serve: Adjust seasoning. Serve hot with a drizzle of olive oil and a splash of lime juice. Top with caramelized onions if desired.
