👨🍳 Instructions
- Sauté Base: Fry bacon in a large pot until crispy. Add onion and cook until golden (6–8 min). Stir in garlic and cook 1 more minute.
- Add Veggies & Broth: Add potatoes, leek, carrots, celeriac, tomatoes, herbs, salt, pepper, and bay leaf. Pour in chicken broth.
- Simmer: Bring to a boil, reduce heat to medium-low, cover, and simmer for 30–40 minutes until vegetables are tender.
- Finish: Stir in parsley and simmer for 1 more minute. Adjust seasoning to taste.
