Chateaubriand is a thick cut from the center of the beef tenderloin, traditionally served for two. It’s pan-seared, roasted, and often paired with a rich sauce like Béarnaise or red wine reduction.

1½–2 lb center-cut beef tenderloin
Salt and freshly ground black pepper
2 tbsp olive oil
2 tbsp butter
2 garlic cloves, smashed
2 sprigs fresh thyme
Optional sauce: Béarnaise, Bordelaise, or mushroom red wine reduction
