🦀 Steamed Crab with Spicy Seafood Sauce


🔪 Method

1. Clean the crabs:

  • Wash the crabs well under running water.

  • Remove any dirt and scrub the shell lightly.

  • If using live crabs, freeze them for 15 minutes before cleaning.

2. Steam the crabs:

  • Bring water to a boil in a steamer.

  • Add the crabs and steam for 15–20 minutes until the shells turn bright orange and the meat is cooked.

  • Let them rest for 5 minutes before cutting.

3. Make the dipping sauce:

  • Using a mortar and pestle (or blender), pound garlic and chilies into a rough paste.

  • Add fish sauce, lime juice, sugar, and a splash of water.

  • Mix until sugar is dissolved.

  • Adjust seasoning (more lime = sour, more sugar = sweet, more fish sauce = salty).

4. Serve:

  • Cut the crabs in halves or quarters.

  • Arrange with the crab roe and fat exposed.

  • Serve with the spicy seafood dipping sauce on the side.
