🔪 Method
1. Clean the crabs:

Wash the crabs well under running water.

Remove any dirt and scrub the shell lightly.

If using live crabs, freeze them for 15 minutes before cleaning.
2. Steam the crabs:

Bring water to a boil in a steamer.

Add the crabs and steam for 15–20 minutes until the shells turn bright orange and the meat is cooked.

Let them rest for 5 minutes before cutting.
3. Make the dipping sauce:

Using a mortar and pestle (or blender), pound garlic and chilies into a rough paste.

Add fish sauce, lime juice, sugar, and a splash of water.

Mix until sugar is dissolved.

Adjust seasoning (more lime = sour, more sugar = sweet, more fish sauce = salty).
4. Serve:

Cut the crabs in halves or quarters.

Arrange with the crab roe and fat exposed.
-
Serve with the spicy seafood dipping sauce on the side.
