- Preheat oven to 190°C (375°F).
- Sauté vegetables: In a pan, heat olive oil. Add onion and garlic, cook until soft. Add mushrooms and cook until browned. Add spinach and stir until wilted.
- Make the sauce: Sprinkle flour over the mixture, stir well. Slowly add milk and cream, stirring constantly. Season with nutmeg, salt, and pepper. Simmer until thickened.
- Assemble: Spoon the mixture into small baking dishes. Top with grated cheese, breadcrumbs, and Parmesan.
- Bake for 20–25 minutes until golden and bubbling.
