
🧁 Bolos de Arroz (Portuguese Rice Muffins)
👨🍳 Preparation Method
- Preheat oven to 200°C (400°F). Prepare muffin molds or paper cups on a baking tray.
- Cream butter and sugar with baking powder, lemon zest, and salt until light and fluffy (5–6 minutes).
- Mix eggs and milk in a measuring cup to total 250ml. Whisk lightly.
- Combine flours in a separate bowl.
- Add egg mixture to the butter mixture in thirds, beating well after each addition.
- Add flour mixture and beat briefly until smooth and creamy.
- Fill molds with about 100g of batter each. Sprinkle tops generously with sugar.
- Bake for 18–20 minutes until tops are crackly and golden. A toothpick should come out mostly clean.
- Cool slightly and serve warm or at room temperature.
