🧁 Bolos de Arroz (Portuguese Rice Muffins)

👨‍🍳 Preparation Method

  1. Preheat oven to 200°C (400°F). Prepare muffin molds or paper cups on a baking tray.
  2. Cream butter and sugar with baking powder, lemon zest, and salt until light and fluffy (5–6 minutes).
  3. Mix eggs and milk in a measuring cup to total 250ml. Whisk lightly.
  4. Combine flours in a separate bowl.
  5. Add egg mixture to the butter mixture in thirds, beating well after each addition.
  6. Add flour mixture and beat briefly until smooth and creamy.
  7. Fill molds with about 100g of batter each. Sprinkle tops generously with sugar.
  8. Bake for 18–20 minutes until tops are crackly and golden. A toothpick should come out mostly clean.
  9. Cool slightly and serve warm or at room temperature.
