Prep the oven: Preheat to 425°F (220°C). Grease 4–6 ramekins or tart pans with butter.
Make the roux: In a saucepan, melt 2 tbsp butter. Whisk in 2 tbsp flour and cook for 30 seconds. Slowly whisk in milk and cook until thickened. Season with salt and pepper. Let cool slightly.
Mix the filling: In a bowl, whisk eggs. Add the cooled roux, cottage cheese, and shredded cheeses. Mix until smooth.
Line the pans: Cut puff pastry into squares and press into each ramekin, covering the bottom and sides.
Fill and bake: Divide the egg mixture evenly into the pastry-lined ramekins. Bake for 25–30 minutes until puffed and golden.
Cool and serve: Let cool slightly before serving. Optional: garnish with fresh herbs like chives or dill.
