👩‍🍳 Method:
- Sear the beef: Season with salt and pepper. Brown all sides in olive oil over medium-high heat. Remove and set aside.
- Caramelize onions: In the same pot, add sliced onions. Cook slowly for 20–30 minutes until golden and sweet. Stir often.
- Add garlic and tomato paste. Cook for 2 minutes.
- Deglaze with wine (or broth), scraping up the browned bits.
- Add beef broth, Worcestershire, thyme, bay leaf, and balsamic (if using). Return beef to the pot.
- Cover and braise in oven at 160°C (325°F) for 2.5–3 hours, until beef is fork-tender.
- Optional: Top with toasted baguette and melted cheese for a French onion soup twist.
