🍲 Method
Caramelize the onions: In a large pot, melt butter with olive oil. Add sliced onions, salt, and sugar. Cook on low heat for 30–40 minutes until golden and soft.
Add garlic and flour: Stir in minced garlic and flour. Cook for 2 minutes to thicken slightly.
Deglaze: Pour in wine (if using) and scrape the bottom of the pot. Add broth, thyme, and bay leaf. Simmer for 20–30 minutes.
Prepare the bread: Toast baguette slices until crisp. Top with grated cheese and broil until melted and bubbly.
Serve: Ladle soup into bowls, place cheesy toast on top, and enjoy hot.
