🍽️ Preparation 

🐔 1. Roast Chicken:

  • Season a whole chicken with salt, pepper, herbs (thyme, rosemary), garlic, and a bit of olive oil or butter.

  • Roast in the oven at 180°C (350°F) for about 1.5 hours, depending on size. Baste occasionally.

🥔 2. Roast Potatoes:

  • Peel (optional) and chop potatoes.

  • Parboil for 10 minutes, drain, shake in the pot to roughen edges.

  • Toss with oil or goose fat, salt, and roast at 200°C (400°F) until golden and crispy (around 40–50 minutes).

🥦 3. Steamed Vegetables:

  • Carrots: Peel and cut into sticks, steam or boil until tender.

  • Broccoli, Leeks, Brussels sprouts: Steam for 5–7 minutes or until just tender.

  • Season with a bit of salt and butter if desired.

🍲 4. Gravy:

  • Use chicken drippings or stock.

  • Add 1–2 tablespoons of flour to make a roux, slowly add water or stock while stirring.

  • Simmer until thick and season with salt and pepper.
