What It Is:
Golden, crispy half-moon pastries filled with a creamy shrimp mixture. Think of it as Portugal’s answer to comfort food — crunchy on the outside, rich and savory inside.
🧾 Ingredients:
- 2 lbs shrimp (heads on)
- 7 cups flour
- 6 cups water
- 2.5 cups whole milk
- ½ cup butter + 2 tbsp for filling
- ¼ cup olive oil
- 2 tbsp salt
- ½ onion, minced
- 1 tsp parsley
- 2 eggs (for filling)
- 2 eggs (for coating)
- 2 cups bread crumbs
- Oil for frying
👨🍳 How It’s Made:
- Make the Dough: Boil water, milk, butter, oil, and salt. Add flour slowly until a dough forms. Let it cool.
- Prepare the Filling: Boil shrimp, peel and chop. Sauté onion in butter and oil, add milk, parsley, and beaten eggs. Stir in shrimp broth and flour to thicken. Mix in chopped shrimp.
- Shape the Turnovers: Roll out dough, place filling, fold and cut into half-moons.
- Coat & Fry: Dip in egg, coat with breadcrumbs, and fry until golden.
