  • 1¾ lbs sweet potatoes (peeled and boiled)
  • 8 cups all-purpose flour

  • 3 tbsp active dry yeast
  • 3 tsp salt

🔥 Instructions:

  1. Boil & Mash: Cook sweet potatoes until soft, then mash and let cool.
  2. Activate Yeast: Mix yeast with warm water and let sit for 10 minutes.
  3. Make Dough: Combine flour, mashed sweet potato, yeast mixture, and salt. Knead until smooth and elastic.
  4. Ferment: Let dough rest in the fridge for up to 3 days (for deeper flavor).
  5. Shape: Divide into 8–10 balls, flatten to about 1 inch thick.
  6. Rest Again: Let rise for 30 minutes in a warm place.
  7. Cook: Heat a dry skillet over medium-high. Cook each flatbread, flipping regularly until a thin crust forms. Toast the sides by turning them upright briefly.
  8. Serve: Slice and slather with garlic butter and chopped parsley.

  • ½ cup butter
  • 2 cloves garlic, minced
  • 1 tbsp chopped parsley
  • Salt to taste

Melt and mix, then spread generously on warm bread.
