Mary Berry’s Langoustine Paella

🧂 Ingredients

  • 6 raw langoustines
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 1 red bell pepper, deseeded and diced
  • 4 garlic cloves, finely chopped
  • A good pinch of saffron, soaked in 3 tablespoons warm water
  • 1 tablespoon paprika
  • 275g (10 oz) paella rice or basmati rice
  • 150ml (¼ pint) dry white wine
  • 1 can (400g) chopped tomatoes
  • 600ml (1 pint) fish stock
  • 250g (9 oz) cod fillet, skinned and cut into chunks
  • 200g (7 oz) squid rings or sliced squid
  • 350g (12 oz) mussels, cleaned
  • 55g (2 oz) frozen peas
  • 2 tablespoons chopped fresh parsley (optional)
  • Lemon wedges, for serving
