Ginger Scallion Lobster

Ingredients (Serves 2–3)
Lobster
2 whole live lobsters (about 1½ lbs / 680 g each)
½ cup cornstarch (for coating)
1 tsp salt (for seasoning lobster before frying)
Neutral oil (enough for shallow frying — peanut, canola, or vegetable oil)
Aromatics & Sauce
3 tbsp ginger, finely julienned
4–5 scallions, cut into 2-inch lengths (white and green parts separated)
3 cloves garlic, minced
1 small red chili, sliced (optional, for heat & color)
2 tbsp Shaoxing wine (or dry sherry)
½ cup chicken stock (or water + pinch of chicken bouillon powder)
1 tbsp oyster sauce
1 tbsp soy sauce
½ tsp sugar
1 tsp sesame oil
