  • 400g large white beans (like fabes de la Granja or butter beans), soaked overnight
  • 200g Spanish chorizo sausage
  • 100g Spanish blood sausage (morcilla)
  • 150g pork belly or smoked ham hock
  • 100g pancetta or thick-cut bacon
  • 1 onion, peeled
  • 1 head garlic, outer skin removed
  • 1 tsp smoked paprika
  • 1 pinch saffron threads
  • 4 cups chicken stock or water
  • ½ cup olive oil
  • Salt to taste
