For the beans:
- 2 tbsp olive oil
- Β½ yellow onion, chopped
- 2 garlic cloves, minced
- 3 tbsp tomato paste
- 1 can (15 oz) fire-roasted tomatoes
- 1 cup low-sodium broth
- 1 can (15 oz) white beans (cannellini or navy), drained
- Β½ cup Kalamata olives, chopped
- 2 tbsp capers
- 1 tsp red wine vinegar or lemon juice
- Β½ cup chopped parsley
- ΒΌ cup grated Parmesan cheese (optional)
- Salt and pepper to taste
For the garlic bread:
- 1 baguette or crusty bread, sliced
- 2 tbsp olive oil
- 1 garlic clove, peeled (for rubbing)
- Optional: dried oregano or chili flakes
