🍲 Ingredients

  • 1 kg goat meat or lamb, bone-in, cut into chunks
  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tsp ground ginger
  • 1 tsp turmeric
  • 1 tsp paprika
  • ½ tsp black pepper
  • Salt to taste
  • 1 cinnamon stick (optional)
  • 1 bunch fresh cilantro and parsley, chopped (reserve stems and leaves separately)
  • 1–2 preserved lemons, quartered (optional for Moroccan flavor)
  • 1 cup cooked white beans (optional)
  • Water or broth, enough to cover the meat
  • Red chili peppers or harissa, for heat (optional)
