Picnic Sandwich with Artichoke and Pepper Spread

🫒 Artichoke & Pepper Spread

Ingredients:

  • 1 can quartered artichoke hearts (drained & patted dry)
  • â…“ cup sweet piquanté peppers (like Peppadews)
  • 3 garlic cloves
  • 1 tbsp chopped Calabrian chilis
  • Juice of ½ lemon
  • 8–10 fresh basil leaves
  • 5–6 tbsp olive oil
  • Kosher salt to taste

Instructions:

  1. Blend all ingredients (except olive oil) in a food processor until pesto-like.
  2. Transfer to a bowl, stir in olive oil, and season to taste.
