🥔 Crispy Grated Potato Pancakes
Ingredients:
- 4 medium potatoes (starchy ones like Russets work best)
- 1 small onion (optional, for extra flavor)
- 1 egg
- 2–3 tbsp all-purpose flour
- Salt and pepper to taste
- Oil for frying
Optional Add-ins:
- Chopped herbs (parsley, chives, dill)
- Grated cheese
- Garlic powder or paprika
👨🍳 Instructions:
- Grate the potatoes using a box grater or food processor. If using onion, grate it too.
- Squeeze out excess moisture using a clean towel or cheesecloth. This helps them crisp up.
- Mix grated potatoes and onion with egg, flour, salt, pepper, and any extras.
- Heat oil in a skillet over medium-high heat.
- Scoop spoonfuls of the mixture into the pan and flatten slightly.
- Fry until golden and crispy on both sides (about 3–4 minutes per side).
- Drain on paper towels and serve hot!
