Spicy Offal Stew with Boiled Eggs
🧄 Ingredients
- 1 kg assorted offal (tripe, liver, heart, intestines), cleaned and chopped
- 4 boiled eggs
- 2 tbsp vegetable oil
- 1 large onion, sliced
- 4 garlic cloves, minced
- 1 tbsp ginger paste
- 2 tsp ground cumin
- 2 tsp paprika
- 1 tsp turmeric
- 1 tsp chili powder (adjust to taste)
- 2 fresh red chilies, sliced
- Salt and pepper to taste
- 1 bunch fresh parsley or coriander, chopped
- 2 cups water or broth
- Optional: vinegar or lemon juice for cleaning the offal
