Steak and Lobster Skillet with Roasted Potatoes
Ingredients:
For the Steak:
2 ribeye or New York strip steaks (1-inch thick)
Salt and freshly ground black pepper
2 tbsp olive oil
2 tbsp butter
2 cloves garlic, smashed
Fresh thyme or rosemary (optional)
For the Lobster:
2 lobster tails, shells split down the middle
2 tbsp butter, melted
1 tsp garlic powder
1/2 tsp paprika
Salt and pepper to taste
For the Roasted Potatoes:
6-8 baby potatoes, halved
2 tbsp olive oil
Salt and pepper to taste
Fresh thyme or rosemary (optional)
For Garnish:
Fresh parsley, chopped
Lemon wedges
Instructions:
Prepare the roasted potatoes: Preheat your oven to 400°F (200°C). Toss the halved baby potatoes with olive oil, salt, pepper, and fresh herbs (if using). Spread them in a single layer on a baking sheet and roast for 25-30 minutes, or until golden-brown and crispy, turning halfway through.
Cook the steak: While the potatoes are roasting, heat a cast-iron skillet over medium-high heat. Season the steaks generously with salt and pepper. Add olive oil to the skillet and sear the steaks for about 4-5 minutes per side, depending on your desired level of doneness. During the last minute of cooking, add butter, smashed garlic, and fresh herbs (if using) to the skillet. Spoon the melted butter over the steaks to enhance their flavor.
Prepare the lobster tails: While the steaks are cooking, brush the lobster tails with melted butter, then season with garlic powder, paprika, salt, and pepper. Once the steaks are done, transfer them to a plate and cover with foil to rest. In the same skillet, add the lobster tails, cut-side down. Sear for 2-3 minutes per side, until the shells are slightly charred and the lobster meat is opaque and cooked through.
Assemble the dish: Arrange the rested steaks, lobster tails, and roasted potatoes in the skillet. Top the steaks with a pat of butter, allowing it to melt over the meat. Sprinkle the entire dish with fresh parsley for color and flavor.
Serve: Garnish with lemon wedges on the side, and enjoy the perfect combination of steak, lobster, and crispy roasted potatoes!
