🔥 Instructions
1. Prep the Gizzards
Rinse and trim the gizzards.
Boil them in salted water for 30–40 minutes until tender. Drain and cool.
2. Marinate
In a bowl, mix buttermilk with garlic powder, onion powder, paprika, cayenne, salt, and pepper.
Add gizzards and marinate for at least 1 hour (overnight for deeper flavor).
3. Coat
In a separate bowl, add flour (or cornmeal) with a pinch of salt and pepper.
Dredge each gizzard in the flour mixture, pressing lightly to coat.
4. Air Fry
Preheat air fryer to 375°F (190°C).
Spray gizzards with olive oil spray and place in a single layer in the basket.
Air fry for 10–15 minutes, flipping halfway, until golden brown and crispy.

Serve with hot sauce, ranch, or garlic aioli.
