Aloo Gosht (Mutton/Lamb and Potato Curry)

Sear the meat: Heat oil in a pot. Add whole spices (cumin seeds, bay leaf, cloves, cinnamon, cardamom). Sauté onions until golden.

Build the base: Add ginger-garlic paste and cook for 1 minute. Add tomatoes and cook until soft. Stir in yogurt and powdered spices.

Add meat: Add mutton/lamb and cook until browned and coated in masala.

Simmer: Add water to cover the meat. Cover and cook on low heat for 45–60 minutes until meat is tender.

Add potatoes: Add potatoes and cook for another 15–20 minutes until soft. Adjust salt and spice.

Finish: Garnish with chopped cilantro. Serve hot with naan, roti, or rice.
