Sauté the onion: Add chopped onion to the bacon fat and cook until soft and translucent.
Make the dressing: Stir in flour, sugar, salt, celery seed, and pepper. Slowly add vinegar and water, stirring constantly. Bring to a boil and cook until thickened (about 2 minutes).
Combine: Add sliced potatoes and crumbled bacon to the skillet. Stir gently to coat everything in the warm dressing.
Finish: Heat through for 5 minutes, sprinkle with fresh parsley, and serve warm.
