  • 500g bread flour
  • 350g water (room temp)
  • 100g active sourdough starter
  • 10g salt
  • 1 cup fresh basil leaves, chopped or torn
  • Optional: 1 tbsp olive oil for richness

1. Mix the dough

  • In a large bowl, combine flour and water. Let rest (autolyse) for 30 minutes.
  • Add starter and salt. Mix until fully incorporated.
  • Gently fold in chopped basil.

2. Bulk fermentation

  • Cover and let rise at room temperature for 4–5 hours, performing stretch-and-folds every 30 minutes for the first 2 hours.
