- 500 ml red wine (preferably Burgundy or Pinot Noir)
- 500 ml beef stock
- 2 bay leaves
- 1 tsp thyme
- 200 g mushrooms, halved
- 200 g pearl onions or small shallots
- Salt and pepper to taste
- Olive oil and butter for cooking
