- Marinate the meat: In a large bowl, mix meat with garlic, spices, salt, and olive oil. Let it sit for 30 minutes if possible.
- Sauté aromatics: In a large pot, cook onions and parsley stems in olive oil until soft.
- Brown the meat: Add marinated meat and sear until lightly browned.
- Add water and herbs: Pour in enough water or broth to cover the meat. Add chopped cilantro, parsley leaves, and preserved lemon.
- Simmer: Cover and cook on low heat for 1.5 to 2 hours until meat is tender and broth is rich.
- Optional beans: Add cooked white beans in the last 15 minutes for extra heartiness.
- Serve hot: Garnish with fresh herbs and serve with warm bread or couscous.
